The diversity of Indonesian cuisine has become one of the most important part of our national identity. This culinary variety is even more enriched by the spicy sauce known as sambal. What makes each sambal unique is the different method of preparation, the raw ingredients, and the quality of composition. For most Indonesian, a dish is simply not complete without sambal but few of us are aware of the huge variety of sambal that can be found across this vast archipelago. The first sambal should be tasted is Sambal Terasi (terasi: shrimp paste from fermented baby shrimp). This tasty sambal made from fried or grilled terasi grind with red chilies, hot chilies (cabai rawit), shallots, garlic, palm sugar and tomatoes. This sambal is perfect to be enjoyed with almost everything especially with assortment of fresh and simply boiled vegetables called lalapan. Then there is Sambal Matah, a Balinese specialty usually use as a condiment for grilled fish or chicken. This sambal uses fresh, raw ingredients such as hot chilies, shallots, lemon grass, and lime leaves, all sliced and blended together. Shrimp paste is also mixed in, lime juice and vinegar is added to give a fresh taste.
Another Balinese creation is Sambal Mbe or crispy shallot sambal. This simple, savory and spicy sambal is made from sliced fried shallot & garlic, lime and hot chilies. Next there is Sambal Dabu-dabu which commonly found in Manado (North Sulawesi). This fresh spicy salsa is made from sliced shallots, basil and hot chilies mixed with diced green tomatoes mixed with freshly squeeze lime, vegetable oil and salt. This Menadonese Chili Salsa is perfect to be enjoyed with seafood. From Maluku archipelago we have Sambal Colo-Colo, this sambal is made from sliced shallots, green hot chilies, tomatoes, sweet soy sauce, and lime. This sweet and spicy sambal is usually served as condiment for seafood.
There are also fish-based sambal includes Sambal Jambal Cabai Hijau, made from a kind of fish known as jambal, which is salted and mixed with garlic, shallots, green chilies, lime leaves and galangal. Moreover, Sambal Teri Medan is also made from salted small fry, shallots, onions, hot chilies, a bay leaves, galangal and lemon grass.
